Looking for an easy entertaining idea? Here’s a fun twist on a summer classic, perfect for front porch parties or other gatherings: Fresh sliced watermelon platter, all dressed up with spring greens, dried fruit, nuts, fresh cheese, and a drizzle of Balsamic dressing. It’s something you can assemble in about five minutes, and still have the prettiest dish on the potluck table. 😉
To make your own: Slice watermelon into 1/4 inch thick wedges. Arrange over a bed of greens on a platter. Sprinkle generously with toppings (I used dried cranberries, Feta cheese, and toasted pecans). D rizzle with balsamic vinegar and olive oil, with a bit of salt and fresh-cracked pepper. The best part about this recipe is, it’s flexible, so you can make it your own. Here are some other topping ideas to try:Toasted Nuts/Seeds: -Pine nuts, almonds, pistachios, walnuts, pecans, pumpkin seeds, sunflower seeds Cheese: -Blue cheese, Feta, fresh Mozzarella, Chevre; shaved Parmesan, Asiago, or Manchego Dried Fruit: -Cranberries, dried apricot, currants, golden or regular raisins Other: -Mint, honey, fresh rosemary or thyme, flavored olive oil, pepper jelly, strips of prosciutto ham.
